琥珀酸二鈉:簡(jiǎn)稱WSA, 俗稱干貝素, 是近年來(lái)調(diào)味品中廣泛應(yīng)用的鮮味劑。它較多存在于貝類、 蝦、 蟹等海產(chǎn)品中, 對(duì)這類食品呈現(xiàn)的鮮美味道起到了很重要的作用。另外, 琥珀酸二鈉在其他植物, 如香菇中也有存在。我國(guó)食品添加劑衛(wèi)生標(biāo)準(zhǔn)規(guī)定其可應(yīng)用于調(diào)味品中。
琥珀酸二鈉分為結(jié)晶琥珀酸二鈉和無(wú)水琥珀酸二鈉。目前, 食品工業(yè)中最常用的為晶體琥珀酸二鈉, 通常含有6個(gè)結(jié)晶水。琥珀酸二鈉是白色結(jié)晶性顆?;蚪Y(jié)晶性粉末, 無(wú)臭、 無(wú)酸味, 有特殊貝類滋味, 味覺(jué)閾值0.03%,易溶于水(20℃ 35 g/100mL),不溶于乙醇。 結(jié) 晶 琥 珀 酸 二 鈉 在120 ℃時(shí)完全失去結(jié)晶水, 即為無(wú)水琥珀酸二鈉, 無(wú)水琥珀酸二鈉鮮度約為結(jié)晶琥珀酸二鈉的1.5倍。
琥珀酸二鈉由琥珀酸與氫氧化鈉反應(yīng)制成,經(jīng)120℃熱風(fēng)干燥,粉碎得無(wú)水物。目前我國(guó)許可使用的有機(jī)酸類鮮味劑只有琥珀酸二鈉一種。
1.琥珀酸二鈉與谷氨酸鈉配合使用,一般使用量為谷氨酸鈉的10%左右。我國(guó)《食品添加劑使用衛(wèi)生標(biāo)準(zhǔn)》(GB2760-1996)規(guī)定,琥珀酸二鈉可用于調(diào)味料,最大用量為20 g/kg。
2.使用范圍及使用量
(1)我國(guó)《食品添加劑使用衛(wèi)生標(biāo)準(zhǔn)》(GB2760-1996)規(guī)定:可用于調(diào)味料,最大用量為20g/kg。
